Can you objectively say how much you enjoyed an anime?

I guess so, it's an objective fact that you did/did not like an anime.
If you're asking whether your opinion is objective or not, then generally no. I guess that can be some instances where something is definitely good and influential but for your average anime, probably not.

and it's all objective here. i would probably try think it's something similar for everyone.
