What happens to translator's notes in subbed anime?

why don't we see them in anime at all?
how come they don't make us understand the references to japanese culture in some anime?

I've definitely seen some anime (having some trouble thinking of which ones, but I know I've seen it - maybe Showa, Genroku, Rakugo, Shinju?) that kept them. Otherwise, I think they either get translated in a way that sort of makes it obvious, or yeah, glossed over.

Oh! Food Wars has a buttload of notes about where different food comes from and what kind of food it is and such. Because, of course. That's what the show is about. XD
 
Fan subs used to do it, but now they just got lazy and rip their subs from Funimation, Crunchyroll, or Netflix

and i think usually sports and food, cultural anime got these notes

and i do think those fan subs deserve a lot more recognition and they are doing it for free

that's something
even the big companies should consider this as well. it's a good thing to have references in anime.
 
Usually people don't pay much attention to them at all.
So they are all removed in anime.
