Yeah I did watch the Gigguk video. I sort of have an idea about the fate series, which one's are canon(F/Z, F/SN, UBW, HF, etc) and which one's are spin-off(Apocrypha, Grand Order, Illya, etc), it's just that people often say there's a spoiler in F/Z that ruins HF and that the original F/SN which adapts the Fate route also spoils UBW and HF.
I have watched F/Z as well and I think it's amazing, but another reason is also because it's a prequel LN written by Urobuchi Gen, writer of Madoka and Psycho-Pass. He's like an amazing dude. I think he also wrote Phantom.
I'm not saying all VN's are boring but in this case I'd rather watch the anime. Also I get the source material readers being annoyed by the changes, that is something that annoys me rather. I always see rants from LN/manga/VN readers in reddit and MAL threads being salty about those things.
My only qualm is whether to go straight to UBW and HF and then rewatch F/Z or watch F/Z first, and whether to watch the original F/SN at all.
I don't actually know what they're talking about when they say the original stay night spoils the other 2 routes other than common sense stuff like who the bad guy is. If it's only that pay no mind to it it's irrelevant it's gonna happen no matter what route you see. I might also be wrong because all the stay nights I watched over many years and I am definitely forgetting or jumbling up a few things at least. Unlimited blade works at least is quite different from the main route. It deals more with shirou, rin and archer than the grail war. The only major spoiler I can think off doesn't get revealed in the main route (as far as I can remember).
Heavens feel literally fast forwards over the part where how shirou becomes a master so it assumes you've seen at least one of the other routes so watch this last. It also breaks a lot of expectations from the other routes so at least it feels like a new anime.
Now the original anime is like the main point of tension. It's quite bad compared to any ufotable work but it's also the most important route and the one that focuses on the grail and the main villan. A new fan looking for a full course of fate I'd tell to watch the original, then zero then UBW and then HF. If you're like me and you watched the original first and were fine with mediocrity you'll be rewarded with how much of an improvement f/z is that you'll just be blown away by it. But if you watch zero first you'll be like "yea nice anime" like when I told your sister to watch it who I had to convince to watch more than just the first episode. I'd say if you can forget about fate zero and just sit through the original anime and then watch either of UBW or Zero you'll like the series so much more.Then maybe you can think about getting into HF. But going F/Z into the original is gonna be like going from heaven to earth. Why play the main route at all if they all start the same? Well I think the other routes kinda assume you've played/watched the main one so you'll be rushed at points and maybe won't get a good enough explanation to things. If you think that's better than sitting though the main F/SN go ahead and play UBW. It's really not that bad though. If you didn't find the early episodes of yuyu hakusho and one piece bad this is honestly nothing.

Fate/Kaleid is something I'll probably watch for sure after the original, I'm not exactly averse to the Mahou Shoujo genre.
