The hardest part for me is to watch first episode / read first chapter
Why? It's generally boring. Usually the first episode used to introduced the main hero of the series, yes i know this is unavoidable and important part of the series but there are not many author can give exciting or clever first episode/chapter. This is the reason that i usually not focused at the early stage of a series
 
i agree but some openings are really good.
i like one piece opening in the manga and in anime. they aren't always boring. you should find the right manga

Yea not all, and when i meet this one good opening it feels like 'whoa..'
 
most of the animes I got into I kind of knew of the juicy stuff down the road, so that is what kind of got me going to endure the whole thing.
 
To be honest I don't really believe in something "getting better", there's always signs of it being good in the first few episodes. 
But if you want series that have great pilot episodes, then I recommend these: Death Note, Code Geass, Megalo Box, Samurai Champloo, Attack on Titan, Made in Abyss, Yuu Yuu Hakushou, Kill la Kill.
The commonality is that these series don't really try to cram the entire world and storybeat into the first episode to kick the plot in the next gear but try to do the development naturally.
 

Yep sometimes this is true but others the beginnings are key to understanding the rest of the series. I try to watch from the beginning of anything that I take a liking to :)
