Do you find it interesting when people use historic stories and then give them a different ending, in anime?
Line Nobunaga. In some anime he is good and in some other anime he isn't

and in some anime he is actually a she :P

I do like their take on it, though most of it seem to be centered around Japanese history which I am not too aware of.

I agree.
I haven't seen many anime, man but this character is very popular.
 
I like Souten Kouro. That anime based on Romance of Three Kingdoms which is tradisionally use Liu Bei's perspective, but in this anime Cao Cao is the main star
 
If I'm not wrong Samurai Champloo itself is sort of an alternate Universe spin on the Edo period. Vinland Saga also loosely depicts characters from history.
As for Oda Nobunaga there's like a 1000 anime I think, one comes out every season.

If I remember correctly Saber is King Arthur in the Fate franchise whereas in the real world King Arthur is a man.
