One piece with a sad end

Hard to say at this point how OP will end, but given its very strong adventure and positive outlook theme, I do think it might end on a bitter sweet ending.
I don't think oda would give a sad ending to the long running popular anime.
May be some twists along the path but nothing major and luffy would never die

I can see Shanks dying before OP ends, and the ending itself might have to do with passing on his gift, the straw hat, to a new owner. That would be a little bit sad, but also inspiring, I think. Can hardly imagine Luffy dying though. It would make sense, considering how he has been pushing his limits so many times, but I doubt even Oda has it in himself to kill such a fun character.
This also made me think that some other characters might die too. Luffy's father may be even sabo might die at the end.
If Oda is efficient, he might kill one of the straw hats too

Killing Luffy would also not fit thematically with the current One Piece story. It is a story about people changing the world around them, converting determination into miracles. And Luffy is the linchpin of it all. It would sort of fall flat if he dies. It is possible to make it happen, but it is not going to be easy.
And most importantly, Luffy is not going to die cause Jump never allows that. He is worth way too much =) Not just 500 million berries, but a ton of real money as well.
