Fillet cut is boring, it's all meat. For beef and lamb it's best to have some fat and bones, it give more flavor, that's why i prefer rib or T-bone steak than premium fatless boneless cut. Same thing for chicken, i prefer my chicken have Bone and skin on it, that's why i always avoid skinless breast meat, the skin and bone give more flavor and i like it. Same thing too for fish, i like my fish completed with the head, fins and skin
