What characters do you know that have been left out of the adaptation and how do you feel about their omission?

are there such characters my man?
i don't know anything about this. i am not a manga reader x(

Oh they are. Sometimes a different characters does the stuff the original did in the material, so we don't lose the arch, but they simplify things. Other times they don't add them because at the time they started animating the manga wasn't finished and the character didn't exist otr at the time it was just minor. Other times they just think the material is better without it. Most long Manga has gone through this in the anime. Heck, even the opposite mya come to be with a character that was created for the adaptation.

As for an example, Ranma 1/2 manga has Akari Unryu. This character was basically created in the manga to give Ryouga a happy ending. Her existence is never even hinted in the anime. Because Ranma is a comedy that thrives in love-hate, Ryouga has a crush on one girl, Akane, but different episodes loves to pairs him with Ukyo through different situations as their personalities seem to compliment each other. However they don't care for each other and team up mostly because to separate Ranma and Akane is a common goal.

The anime also temporarily had the opposite thing where they created a completely different character: Sasuke, to replace another Gosunkugi, since his apparition for the anime was delayed until further seasons.

In fact Ranma 1/2 has plenty of manga-only and anime-only list of characters but I am pretty sure this situation is common occurrence and there are more examples there.

Only manga readers will be able to see that.
Normal users will never get to now such characters

That's interesting =) I'm sure there are lots of other examples, but nothing comes to mind. If you count novel adaptations too, then Slayers is a good example. Not only did they remove characters, they redid a lot of the story lines, making really big changes. That kinda makes it even more interesting, cause you get two different stories that you can enjoy on their own.

I did not know that I will have to read the manga.

I have never heard of this before
Characters are always in the adaptation and I never knew of any characters being created for the adaptation.

there are many like that
people try to sidetrack from the actual story and it happens a lot more than we think.

Yeah. I think it is even less common that an anime adaptation follows the manga without changing anything.

Personally, I find quite interesting and makes me wonder what move them to cut off a character, is it because they are not very interesting? Do they interfere with their vision for the plot? Etc.

There's also the flipside situation where a character is created for the anime version. So that's a character that doesn't exist in the original material. That's also a pretty interesting call. Not sure I made a thread on that, though I have the feeling that I probably have. Haha. Knowing me.
